About This Cut - Known as akami, the loin is the leanest cut off the tuna and deep red in color. Each saku block is carefully cut from the prime loin meat of the tuna.
Yield - 1 portion is 3-4 oz. Each saku block yields enough slices to make up to 10 pieces of nigiri or 16 pieces of maki (two uncut maki rolls).
Easy Sushi Recipes - This super frozen, hand-cut saku block has been designed to make restaurant quality sushi, sashimi, ceviche, poke and crudo at home. For a simple option, slice to desired sashimi thickness with a sharp knife, and serve with soy sauce. For more inspiration, try Tuna Nigiri or Maguro Zuke Don (Soy-marinated Tuna Bowl)
Health Benefits - Bigeye tuna is a very good source of protein, thiamin, selenium, vitamin B6, and omega-3 fatty acids.
Did You Know - This wild-caught Bigeye tuna is landed in North Carolina. Bigeye is one of the lesser known tuna species caught on the east coast. Less fatty than the larger Bluefin, the Bigeye hits a sweet balance between fat content and lean meat.
