About This Cut - Known as akami, the loin is the leanest cut off the tuna and deep red in color. Poke cubes are carefully cut from the prime loin meat of the tuna.
Yield - 1 portion is 5 oz. Each poke portion is enough to make up to 2 poke bowls or 24 pieces of maki (three uncut maki rolls).
