This caviar hails from Warmia in the north-eastern part of Poland, which is referred to as the “green lungs of Poland”, and was included in the Natura 2000 Network. The sturgeon here are bred in ponds supplied by the crystal clear waters of the Łyna River. Upon maturity, usually 8-10 years, female sturgeon are rigorously evaluated to ensure that only the most decadent caviar is harvested.
