About This Cut - Chu-toro is a medium fatty cut. This cut is a mix of akami (tuna loin) and toro (tuna belly), found closest to the skin on both the top and bottom loins. It is richer in flavor and more buttery than akami.
Yield - 1 portion is 3-4 oz. Each saku block yields enough slices to make up to 10 pieces of nigiri or 16 pieces of maki (two uncut maki rolls).
