Sheepshead from North Carolina. One of the more unique fish that you will find from the mid Atlantic. Called convicts because of their black and white stripes, they can be found hanging around jetties and docks. A diet of shellfish infuses a sweet flavor into the flesh of Sheepshead. The flakes are dense and moist, and the texture holds up well against most cooking methods.
